The Development of Kimchi Products, Packaging, and Marketing Research Project’s Final Report Presentation

December 12, 2023—Asst. Prof. Dr. Tanong Aewsiri from the School of Agricultural Technology and Food Industry (SAF), along with the working team of the Center for Academic Services (CAS) at Walailak University, presented the final report of “The Development of Kimchi Products, Packaging, and Marketing Research Project” to the representatives of the Royal Development Projects Board (ORDPB) and the Administration and Coordination Center for Pak Phanang River Basin Development, both of which supported the research budget for this project. The presentation took place at the Administration and Coordination Center for Pak Phanang River Basin Development.

The research work has been widely recognized for its completeness in both academic aspects and its benefits to the community and related sectors. The research project has successfully provided free access to knowledge on food security and technology of production process, basic sanitation, and marketing concept of Kimchi for local farmers, interested individuals and occupational development-related organizations.

Farmers and communities have applied the knowledge to increase the economic value of household vegetable production, reduce food waste, and minimize expenses by producing and consuming Kimchi. Moreover, communities in the target area and the Boonprachit Garden Community Enterprise have utilized the acquired knowledge to commercially produce and sell Kimchi through various channels such as social media, direct sales at stores, and setting up booths at various events. This has become an alternative profession that contributes to the economic development of the community.
