WU Food Center: Healthy, Affordable and Sustainable food choices for all.

       Walailak University has policy which focus on student’s life, staffs, and general people to be able to live and to learn happily in the university environment. Walailak University has perfectly managed for student able to access to the university service. So, Walailak University emphasize accessible service to be accordance with the organization under supervision policy of property management center. There are the determined to educate the cook and food handler able to acknowledge the principle of hygiene, security in good cooking, hygienic along with health evaluation of cook and food handler. This survey is to assess the safety of various ready-to-eat foods that were available in shops. Moreover, there is evaluation the food selling area to follow the determined standard in every year

          Style of food selling areas in Walailak University that has a service divided into 3 style

1 permanent building area is open every day and there is dining table covering more than 100 people/ duration. This building is a canteen style located within the university. There are 2 areas as following:

 

Canteen”4 “located near lecture building 6 open every day at 06.00-14.00 (Closed during public holidays)

Cho Pradu Food center located in dormitory area, open every day at 06.00-20.00. During Ramadan festival, there will a special service time. (Ramadan holding in April)

These are 2 food selling areas, there are more than 70 shops. Walailak University provide sustainable food options for everyone on campus such as vegetarian, carnivorous as well as responding to the diversity of multicultural religions such as Buddhist food, Muslim food (Halal label). Most of the food that selling here is rice and curry, restaurant with Thai food cooked to order, northeast food, noodle, dessert and various of beverage

  1. This building is consisting of façade or room divider for selling the food on lecture building. The dining area within the shop covering 10 – 20 people/ duration. In Walailak University, there are this kind of shops more than 20 shops. They sell dessert and various of beverage.
  1. Temporary areas (Market) open only on Monday of each weeks -the end of trimester. Most of the food that selling here are rice and curry, restaurant with Thai food cooked to order and northeast food, dessert and various of beverage. The dining area is temporary and easy to move.

Therefore, Walailak University was determined the policy and management to supervise in term of healthy and affordable food choices which It is most of focus. Including, quality in selling food to consumers such as students and staff, as well as outsiders who come to use the university food center which Walailak University emphasize to establishing standards and quality control processes for food distribution services. In addition, this will be a guideline for restaurant operators, knowledge about understanding in food sanitation (according to the requirements of the Department of Health), the food shop management, standard control, service quality control covering understanding the rules and other practices accordance to Walailak University prescribe. All of these is for food distribution services following the food sanitation principles and confident of consumers that they will consume quality and safety food base on sanitation principles

 

 

           Thus, students and staffs in Walailak university will receive health protection and can ensure that will consume the hygiene, quality, and safety food. Moreover, business operations shall be in accordance with the relevant laws so, there will be food sanitation assessment (Physical) in A.D. 2017 by appointing a committee to develop food sanitation system in Walailak University canteen

Sanitary System Development Committee has responsible as below

 

8 hours of training for cooks and food handlers is for 3 hours, which must be done pre-test before and after the training will be obtain a certificate of “registered” sanitation food to food vendors in the canteen

2 .Assessment of the food sanitation in the canteen, it will be assessed 3 times a year.

3. Creating a manual about canteen standards and quality assessment

In 2019, for increasing the efficiency of control and develop food sanitation systems, there was appointment of a working group to control the restaurant service of entrepreneurs in the canteen of Walailak University (Walailak University Order No. 392/2019 dated 9 April 2019)

 

           

The evaluation of the Development Food sanitation system Committee in the canteen Walailak University has creating “Clean Food Good Taste” for food canteen and Food Safety) for food stalls and Sufficiently Clean Toilets (HAS) standards are adapted under the context of Walailak University appropriately.

The evaluated in every year with the aim of to ensure safety for service users who are students, personnel and people or people who come to contact with Walailak University.

Food provider within Walailak University must comply with the following requirements:

  • Announcement of Walailak University Rules, the regulations, prohibitions, and penalties are for tenants of space for operating a restaurant business within in Walailak University (dated October 9, 2017)

 

  • Announcement of Walailak University that “Guidelines for restaurant management in Walailak University canteens” (dated February 8, 2019)
  • Announcement of Walailak University regarding the terms and details attached to the Walailak University Space Rental Agreement (dated 23 July 2019)

 

  • Regulations of the Department of Health, Ministry of Public Health Food sanitation standards for restaurants

         

There are important essence of the regulations that provide healthy and affordable food choices for all on campus divided into 3 types as below

 

Assessment

  • – Every restaurant must pass a food sanitation assessment. with 2 evaluations
  • – Every week there will be a quality assessment. and food prices

 

 

Sanitation and food quality

  • The preparation and cooking area is clean and tidy.
  • Food and beverages in a sealed container
  • Fresh food and dry food are of good quality, kept separately.
  • cooked food Store in a clean, covered container at least 60 cm above the floor.
  • There is a cabinet to cover the ready-to-cook food. and the front of the cabinet must be glass
  • All food vendors are required to dress appropriately, clean, have an apron, hair cover and gloves when picking or selling food.
  • Vegetable service (with a concealed container/equipment for chopping or scooping vegetables)
  • Spoons, forks, and chopsticks are placed in a clean, transparent container. or placed in an orderly container clean and covered Set at least 60 cm above the floor.
  • Clean the area inside the shop and the central area with disinfectant twice a month.

Price

Must clearly show the price of all types of food and sold at no more than the specified price

According to emphasis on quality control of service and food quality, including the quality of food distribution to consumers, both students and staff, as well as outsiders who come to use Walailak University Food Center.

The result shows that the service users have good wellness and good health.
